How to Clean and Re-season a Griddle

Turn the griddle on high heat and use a bench scraper to scrape away all the old, caked-on grease and food debris.

Turn the heat off. Carefully pour a generous amount of water onto the hot griddle. The steam will help loosen any remaining residue.

Continue scraping the surface to remove the loosened gunk.

Once the griddle has cooled down, spray it liberally with a grill degreaser, covering the entire surface.

Using a mesh sponge or scouring pad, scrub the entire griddle surface to remove any rust and remaining grime.

Turn the heat back on to high and let the griddle heat for at least 10 minutes, until it is very hot and begins to smoke.

Pour a generous amount of neutral, high-smoke-point oil onto the hot surface.

Using a paper towel (held with tongs or a scraper for safety), spread the oil evenly across the entire surface to create a thin, even coat.

Allow the oil to sit on the hot surface and burn off for a couple of minutes. This will create the first layer of seasoning.

Repeat the process: add more oil, spread it into an even layer, and let it burn off completely.

For the final coat, turn the heat off. Add one last layer of oil and spread it evenly over the warm surface. This will protect the griddle.

Your griddle is now clean, re-seasoned, and ready for cooking.
