In a food processor, combine the chopped onion, parsley, garlic cloves, and jalapeño.
Blend the ingredients into a fine paste, scraping down the sides of the processor as needed to ensure everything is incorporated.
Optional: Place the paste onto a paper towel and squeeze out the excess moisture. This will help prevent the pita bread from becoming soggy.
In a large bowl, combine the vegetable paste with the ground beef.
Season the meat mixture with Aleppo pepper, paprika, cayenne pepper, garlic powder, salt, and black pepper.
Using your hands, mix everything together until the spices and paste are evenly distributed throughout the beef.
Cut the pita breads in half and gently open each half to form a pocket.
Stuff each pita pocket with the beef mixture, spreading it into a thin, even layer. Be careful not to overstuff.
Brush the outside of the stuffed pitas with chili-infused oil.
Place the arayes, oiled-side down, onto a hot grill pan over medium heat.
Brush the top side of the pitas with more chili-infused oil.
Grill for a few minutes, flipping constantly to cook all sides, until the pita is golden brown and crispy, and the meat is fully cooked through.
Serve immediately while hot.
