In a glass, combine the instant espresso powder with 6 ounces of hot water.
Using a handheld frother, mix the espresso and water until frothy.
In a large serving cup, drizzle about 2 tablespoons of caramel sauce around the inside.
Fill the cup with ice.
Add 3 tablespoons (about 6 pumps) of vanilla syrup to the cup.
Pour in the 2% milk.
Pour the frothed espresso mixture over the milk and ice.
Add a splash of vanilla sweet cream, if desired.
To make the cold foam, combine heavy cream, 1 tablespoon (about 2 pumps) of vanilla syrup, and 1 tablespoon of caramel sauce in a separate container.
Use a handheld frother to whip the mixture until it thickens into a foam.
Pour the caramel cold foam over the top of the latte.
Garnish with an additional drizzle of caramel sauce.
Stir and enjoy.
Assemble fresh to order for best cold foam texture. Pre-made espresso mixture keeps refrigerated up to 24 hours; froth foam within 1 minute of serving.
