In a large bowl, zest the limes.
Juice the limes until you have 1 cup of fresh juice.
To the bowl with the lime zest, add the fresh lime juice, water, granulated sugar, and a drizzle of corn syrup.
Whisk the mixture until the sugar is completely dissolved.
Pour the sorbet base into an ice cream maker container.
Cover and freeze the container overnight, or for at least 8 hours.
Once frozen solid, place the container in your ice cream maker and process according to the manufacturer's instructions (e.g., on the 'Sorbet' setting).
Serve immediately and enjoy.
Freeze in an airtight container for up to 2 weeks; soften at room temperature 5–10 minutes before scooping.
ice cream maker (optional—improves texture but not required)
No. This recipe works without one, though an ice cream maker produces smoother texture. Without one, freeze in a shallow pan and stir every 30 minutes, or blend frozen portions until scoopable.
Corn syrup lowers the freezing point, preventing rock-hard ice crystals and creating a smoother, softer scoop. It's optional but improves texture.
Store in an airtight container in the freezer for up to 2 weeks. It hardens over time; let it soften at room temperature 5–10 minutes before scooping.
Fresh lime juice delivers brighter flavor and better results. Bottled juice often contains preservatives and lacks the same citrus intensity.
Graininess occurs without stirring during freezing or omitting corn syrup. Stir every 30 minutes if freezing manually, or use corn syrup to improve texture.
