In a large bowl, crush the garlic cloves.
Slice the eggplant into 1/4-inch thick rounds and add them to the bowl with the garlic.
Add the juice of half a lemon, a drizzle of olive oil, salt, pepper, and oregano to the bowl.
Toss everything together until the eggplant slices are evenly coated.
Preheat a grill to approximately 400°F.
Place the eggplant slices on the grill and cook for about 8 minutes, flipping halfway through.
Lightly toast the hoagie rolls on the grill.
While the eggplant is grilling, prepare your toppings: slice the tomato and chop the olives.
To assemble the sandwich, spread a generous layer of garlic aioli on both sides of the toasted buns.
Layer the grilled eggplant, sliced tomatoes, fresh spinach, basil, chopped olives, and crumbled feta cheese onto the bottom bun. Place the top bun on and serve.
