Mini Cheeseburger Skewers with Tater Tots

Preheat your oven. (Note: Temperature not specified, 400°F/200°C is recommended). Brush the cups of a muffin tin with olive oil.

Place 3 frozen tater tots into each muffin cup.

Bake for 10 minutes.

Remove the muffin tin from the oven. Transfer the tater tots to a baking sheet and gently mash them down.

Return the smashed tater tots to the oven and bake for another 10-15 minutes, or until golden and crispy.

While the tots are baking, season the ground beef with salt, pepper, garlic powder, and onion powder. Form into small, bite-sized patties.

Heat a large skillet over medium-high heat. Add the patties and cook for 2-3 minutes per side, until cooked through.

Cut each slice of cheese into four smaller squares. Once the patties are cooked, remove them from the heat and place a square of cheese on top of each to melt.

Prepare the toppings: thinly slice the tomato, tear the lettuce into small pieces, and slice the red onion if using.

In a small bowl, mix together the mayonnaise, ketchup, and mustard to create a dipping sauce.

Assemble the skewers. Thread a tater tot, a piece of lettuce, a cheeseburger patty, a slice of tomato, a slice of red onion (if using), another tater tot, and a pickle onto each skewer.

Serve the skewers immediately with the dipping sauce on the side.
