In a small saucepan, combine equal parts apple cider vinegar and water.
Bring the liquid to a boil over medium-high heat.
Add the diced red onion to the boiling liquid and cook until just slightly softened.
Season with a pinch of salt.
Drain the onions and transfer them to a serving bowl.
Drizzle with oil and add the chopped fresh oregano and parsley.
Mix well to combine and serve.
