In a medium bowl, combine chicken stock, roasted garlic olive oil, tomato paste, grilling spice blend, and Greek seasoning. Whisk until well combined and set aside.
Place a large oven bag inside a baking dish. Add the chopped onion, bell pepper, celery, potatoes, and carrots to the bag.
Lightly season the vegetables with butter garlic seasoning and add the butter slices.
Arrange the chicken pieces on top of the vegetables inside the bag.
Pour the prepared marinade over the chicken and vegetables.
Gently toss everything in the bag to coat. Seal the bag and marinate in the refrigerator for at least 1 hour.
Preheat your oven to 375°F (190°C).
After marinating, tie the oven bag closed, ensuring it's sealed.
Bake for 1 hour and 35 to 40 minutes.
Carefully remove from the oven and let it rest for a few minutes. Cut open the bag, allowing steam to escape away from you. Serve immediately.
