In a small bowl, combine the garlic-infused olive oil, chicken stock, grilling spice blend, garlic pepper seasoning, and fresh rosemary. Whisk until well combined to create the marinade.
Place a large oven-safe bag inside a baking dish. Add the sliced carrots, quartered potatoes, and smashed garlic cloves to the bag.
Place the chicken breasts on top of the vegetables inside the bag.
Pour the prepared marinade over the chicken and vegetables.
Twist the bag closed and shake well to ensure the chicken and vegetables are evenly coated. Let marinate for 25-30 minutes.
Preheat your oven to 375°F. Tie the bag closed with the provided tie.
Bake for 1 hour and 45 minutes.
Carefully remove the dish from the oven. Cut the bag open, allowing steam to escape away from you. Serve the chicken and vegetables with the juices from the bag.
