Slice the drained baby corn in half lengthwise.
In a large bowl, combine the olive oil, garlic powder, and paprika.
Grate in about half of the Parmesan cheese and mix to combine.
Add the sliced baby corn to the bowl and toss until evenly coated.
Spread the baby corn in a single layer in a baking dish.
Top with the remaining grated Parmesan cheese.
