Preheat your oven to 450°F (232°C).
Season chicken breasts generously on both sides with salt, pepper, garlic powder, onion powder, and paprika.
In a large oven-safe skillet, heat olive oil over medium-high heat. Sear the chicken for 3-4 minutes per side until golden brown. Do not cook it all the way through.
While the chicken sears, place the crackers in a bag and crush them into coarse crumbs.
In a small bowl, combine the crushed crackers with the melted butter and mix until evenly coated.
Once the chicken is seared, spread the garlic and herb cheese evenly over the top of each breast.
Spoon the pepper jelly over the cheese layer.
Top generously with the buttered cracker crumbs.
Transfer the skillet to the preheated oven and bake for about 10 minutes, or until the toppings are bubbly and the chicken is cooked through.
Remove from the oven, garnish with fresh parsley if desired, and serve immediately.
