On a lightly floured surface, lay out one sheet of thawed puff pastry.
Spread the basil pesto evenly over the surface of the pastry.
Sprinkle the crumbled feta cheese over the pesto.
Place the second sheet of puff pastry on top, pressing down gently.
Cut the layered pastry into 1-inch wide strips.
Twist each strip several times and place them on a baking sheet lined with parchment paper.
Grate Parmesan cheese over the top of the twists.
Bake at 400°F (200°C) for 15-20 minutes, or until golden brown and puffed.
Remove from the oven and drizzle with olive oil.
Garnish with fresh chopped chives and serve warm.
