Red Bull and Vodka Pods
Red Bull and Vodka Pods are delicate, burst-in-your-mouth spheres made through reverse spherification, a molecular gastronomy technique that suspends the classic energy-drink-and-vodka combination in a thin gel membrane.

In a measuring cup or bowl, combine the Red Bull and vodka.
Add the calcium lactate gluconate to the liquid mixture and stir until it is completely dissolved.
Pour the mixture into a silicone ice mold.
Place the mold in the freezer until the pods are frozen solid, at least 2 hours.
While the pods freeze, prepare the sodium alginate bath by blending the sodium alginate with the distilled water until smooth. Let it rest to allow air bubbles to dissipate. Prepare two separate bowls of plain water for rinsing.
Once frozen, pop one pod out of the mold and drop it into the sodium alginate bath.
Let the pod sit in the solution for about 2 minutes. A gel-like membrane will form as the outside thaws.
Using a spoon, carefully remove the pod from the sodium alginate bath.
Immediately transfer the pod to the first rinse bath, then to the second rinse bath to remove any excess sodium alginate solution.
Serve and enjoy immediately.
Pods are best consumed immediately. If storing, keep in a separate calcium bath at room temperature for up to 4 hours; do not refrigerate as cold temperatures affect the gel membrane texture.
spherification spoon or small round measuring spoon · two separate bowls (for alginate bath and rinsing) · slotted spoon · distilled water (for accurate spherification and rinsing)
Reverse spherification uses sodium alginate in the liquid base and calcium lactate gluconate in the bath. It creates thinner, more delicate membranes and works better for acidic liquids like Red Bull, whereas regular spherification would cause the Red Bull to thicken the gel layer.
Pods are best served immediately after creation, as the gel membrane continues to thicken over time. If made ahead, store in a separate calcium bath (not the Red Bull mixture) and consume within a few hours.
Calcium lactate gluconate is added to the Red Bull-vodka mixture. When the liquid enters the sodium alginate bath, the calcium ions react with the alginate to form the thin gel membrane around each pod.
Yes, substitute the 60g vodka with additional Red Bull or another beverage of choice. The spherification technique remains the same; only the flavor profile changes.
You need a spherification spoon or specialized sphere-making tool, two separate bowls (one for the sodium alginate bath, one for rinsing), and ideally a slotted spoon for handling the delicate pods.
