Remove the chicken sausage meat from its casings.
Take one sausage link and press the meat evenly onto one corn tortilla, spreading it all the way to the edges. Repeat with the second sausage and tortilla.
Place the tortillas meat-side down into a hot, dry skillet over medium-high heat.
Cook for 3-4 minutes, pressing down with a spatula, until the sausage is browned and cooked through.
Flip the tortillas and cook for another minute until the tortilla side is lightly crisped.
Remove the sausage tortillas from the pan and place them on a plate.
Top each with a generous amount of yellow mustard.
Add a few dill pickle slices on top of the mustard.
Fold in half like a taco and serve immediately.
