Spherification is a molecular gastronomy technique where sodium alginate (a thickener) reacts with calcium lactate in a brine bath to form a gel membrane around liquid. Here, it creates pickle brine-filled spheres.
No. Sodium alginate, calcium lactate, and xanthan gum are essential to the spherification process and cannot be easily substituted with common pantry items.
Store in additional pickle brine in the refrigerator for up to 5–7 days. The spheres may soften over time as the membrane continues to gel.
Any whiskey works; choose one you enjoy drinking. Rye or bourbon's bold flavor pairs well with pickle brine, but use what you prefer.
Yes. Maintain the ratio: 100 grams brine to 1 gram calcium lactate, 0.375 grams xanthan gum, and 1.875 grams sodium alginate per batch.
