Preheat your oven to 400°F (200°C).
Prepare the corn by breaking each ear in half. Stand each half on its end on a cutting board and carefully slice it lengthwise into quarters to create 'ribs'.
Place the corn ribs in a large bowl and drizzle with vegetable oil.
In a small bowl, combine 1 tbsp Old Bay seasoning, 1 tsp garlic powder, and 1 tsp paprika.
Sprinkle the seasoning mixture over the oiled corn ribs and toss until they are evenly coated.
Arrange the seasoned corn ribs in a single layer on a parchment-lined baking sheet.
Bake for 20-25 minutes, or until the corn is tender and slightly charred on the edges.
While the corn is baking, prepare the garlic butter sauce. Mince the garlic cloves.
In a small saucepan, melt the butter over medium heat.
Add the minced garlic to the melted butter and cook until fragrant, about 1 minute.
Stir in the remaining 1/2 tsp paprika, 1/2 tsp Old Bay seasoning, and dried parsley. Let it simmer for another minute.
Once the corn ribs are done baking, transfer them to a clean bowl.
Pour the hot garlic butter sauce over the corn ribs and toss to coat completely.
Serve immediately, with ranch dressing for dipping if desired.
