Stone Fence

Pro tips

• Add bitters directly to the glass before pouring Scotch to ensure even distribution.
• Use fresh ice to keep the drink cold without dilution; serve immediately after mixing.
• Stir gently after adding the soda or cider to preserve carbonation.
• Taste and adjust bitters to preference—start with 2 dashes and add more for complexity.

Substitutions

• Scotch → Irish whiskey or rye whiskey (changes character but maintains balance)
• Club soda → ginger ale (adds spice and sweetness)
• Bitters → chocolate or orange bitters (shifts flavor profile)

What is a Stone Fence cocktail?

A Stone Fence is a traditional cocktail made with Scotch whisky, bitters, and either club soda or cider, served over ice.

Can I use club soda instead of cider?

Yes—club soda makes it lighter and more refreshing, while cider adds subtle sweetness and fruit notes. Either works depending on preference.

What type of bitters should I use?

Angostura bitters are traditional and most commonly used, but any aromatic bitters work well.

Should I use a specific Scotch?

Any Scotch works, but blended or lighter expressions won't overpower the bitters and mixer; avoid heavily peated varieties unless you prefer that profile.
