Preheat your oven to 425°F. Arrange the Texas toast slices on a parchment-lined baking sheet.
Bake the toast for 5 minutes until lightly golden.
While the toast bakes, prepare the au jus. In a small saucepan, whisk together the au jus gravy mix and water. Bring to a simmer over medium heat.
Add the sliced roast beef to the simmering au jus to warm it through.
Remove the toast from the oven. On each slice, layer one slice of provolone cheese, a portion of the warmed roast beef, and a second slice of provolone cheese.
