Preheat your oven to 400°F (200°C). Slice the baguette or ciabatta lengthwise and place on a baking sheet. Bake for 5 minutes, just until lightly toasted inside.
Prepare the sauces: In a bowl, mix mayonnaise, sriracha, lemon juice, minced garlic, salt, and pepper until smooth for the spicy mayo. For the honey mustard, mix together dijon mustard and honey until well combined.
Spread 2-3 tbsp of spicy mayo on each half of the toasted bread. Layer the deli chicken on the bottom slice, followed by the gouda slices.
Place the bottom slice back in the oven for 2-5 minutes, or until the gouda is bubbling and melted.
While the cheese melts, arrange the pickles on the top half of the bread.
Once the cheese is melted, remove the bottom half from the oven. Top the chicken with crispy bacon, red onion slices, tomato, and a sprinkle of salt and pepper. Drizzle honey mustard over the veggies.
Add the shredded lettuce on top, then close the sandwich. Slice into smaller portions as desired, and enjoy your delicious, gourmet deli chicken sandwich!
Wrap cooled sandwich in foil and refrigerate up to 2 days; reheat in a 300°F oven for 5 minutes to restore bread texture.
Yes. Assemble completely, wrap in foil, and refrigerate up to 4 hours. Bake from cold, adding 2–3 minutes to baking time.
Substitute with aged cheddar, gruyère, or smoked provolone. All melt well and pair with bacon and deli chicken.
No. The baking process toasts and crisps the exterior while the cheese melts inside, so starting with fresh bread gives the best texture.
Layer lettuce and pickles on top after baking, while the sandwich is still warm. The heat won't wilt them if added last.
Yes. Assemble multiple sandwiches on a baking sheet, bake at the same temperature, and check doneness at 8–10 minutes depending on density.
