First, prepare the banana bread syrup. Combine bananas, water, sugar, maple syrup, and cinnamon in a saucepan. Bring to a simmer and cook until the sugar dissolves and the mixture thickens slightly. Allow it to cool completely.
Pour the cooled, chunky syrup into a blender and blend until completely smooth.
Fill a tall glass with ice and pour in two shots of brewed espresso.
Pour the desired amount of the blended banana bread syrup over the espresso and ice.
Top with whole milk.
To make the cold foam, combine a small amount of the banana bread syrup (about 1 tablespoon) with heavy whipping cream in a separate glass.
Use a handheld frother to whip the mixture until it becomes a thick, creamy foam.
Gently pour the banana bread cold foam over the top of the latte. Serve immediately.
