In a saucepan over medium heat, combine ketchup, water, vinegar, brown sugar, Worcestershire sauce, onion powder, garlic powder, and black pepper. Whisk to combine and let it simmer while you prepare the pork.
Divide the ground pork into 7 equal portions. On a piece of parchment paper, form each portion into a long, flat patty shaped to fit your hoagie rolls.
Use the back edge of a spatula to press lines into the top of each patty to mimic the look of ribs.
Place the formed patties onto a wire rack set inside a baking sheet.
Season the tops of the patties generously with your favorite BBQ seasoning.
Bake in a preheated 400°F (200°C) oven for about 20 minutes, or until the pork is cooked through.
Remove the patties from the oven and brush them generously with the prepared BBQ sauce.
Assemble the sandwiches by placing a sauced patty on a toasted hoagie roll. Top with sliced onions and dill pickles before serving.
