Caramelized Onion Spinach Dip

Thinly slice the onions.

In a large pan, heat olive oil over low heat. Add the sliced onions and a hefty pinch of salt.

Cook the onions low and slow, stirring occasionally, for about 1 hour until they are deeply caramelized and sweet.

While the onions cook, melt butter in a separate pan over medium heat.

Add the fresh spinach to the melted butter and cook, stirring, until it has wilted down completely.

Stir in the minced garlic and red pepper flakes, and cook for another minute until fragrant.

Turn off the heat and add the softened cream cheese to the spinach mixture. Stir until well combined.

Stir in the sour cream and 1 cup of the shredded cheese blend.

Once the onions are caramelized, add them to the spinach and cheese mixture.

Gently fold everything together until fully incorporated.

Transfer the dip to an oven-safe skillet or baking dish and spread it into an even layer.

Top with the remaining 1 cup of shredded cheese.

Bake in a preheated oven at 400°F (200°C) for 15 minutes.

For a golden-brown top, switch the oven to broil for the last 1-2 minutes, watching carefully to prevent burning.

Garnish with fresh chopped parsley and serve hot with chips or crackers.
