Slice the tops off the jalapeños. Use a fork or a coring tool to scoop out the seeds and membranes.
In a food processor, combine the shredded cheese, cream cheese, bacon bits, and garlic powder. Pulse until the mixture is well combined.
Transfer the cheese mixture to a piping bag and pipe it into the hollowed-out jalapeños until they are completely filled.
Place the stuffed jalapeños in the fridge to chill and firm up, about 30 minutes.
While the jalapeños chill, prepare the egg wash. In a medium bowl, whisk together the eggs and hot sauce until smooth.
Remove the chilled jalapeños from the fridge and slice them into 1/2-inch thick rounds.
Set up a breading station with three shallow bowls: one with all-purpose flour, one with the egg and hot sauce mixture, and one with breadcrumbs.
Dredge each jalapeño slice first in flour, then dip it in the egg mixture, ensuring it's fully coated, and finally press it into the breadcrumbs to coat completely.
Heat vegetable oil in a deep fryer or a heavy-bottomed pot to 375°F (190°C).
Carefully add the breaded jalapeño bites to the hot oil in batches. Fry for about 1 minute, or until golden brown and crispy.
Remove the popper bites from the oil with a slotted spoon and let them drain on a wire rack. Serve immediately with your favorite dipping sauce.
