In a large oven-safe skillet over medium-high heat, melt the butter.
Add the bite-sized chicken pieces and chopped onion to the skillet. Season with paprika, garlic powder, onion powder, salt, and pepper.
Cook, stirring occasionally, until the chicken is browned and cooked through.
Stir in the minced garlic and parmesan garlic sauce until everything is well coated.
Add the rinsed rice to the skillet and stir for about a minute to toast it slightly.
Pour in the chicken broth and stir to combine, making sure the rice is submerged.
Bring the mixture to a simmer, then reduce the heat to low, cover the skillet with a lid, and let it cook for 15 minutes, or until the rice is tender and the liquid has been absorbed.
Remove from heat and stir in the cream cheese and about half of the shredded mozzarella until fully melted and incorporated.
Top the skillet with the remaining mozzarella cheese and the crumbled bacon.
Place the skillet in the oven under the broiler for 2-3 minutes, just until the cheese is melted and bubbly.
Garnish with chopped fresh parsley, if desired, and serve immediately.
