In a large bowl, combine chicken thighs, salt, Greek yogurt, paprika, oregano, coriander, cumin, minced garlic, lemon juice, and olive oil.
Mix the chicken and marinade thoroughly with your hands until the chicken is fully coated. Set aside.
Place the thinly sliced red onion in the bottom of an oven-safe dish or air fryer basket and season with salt.
Place a rack over the onions and arrange the marinated chicken on top. Cook until the chicken is golden brown and cooked through (e.g., in an air fryer or oven).
While the chicken cooks, prepare the tzatziki. Grate the cucumber onto a clean kitchen towel.
Sprinkle the grated cucumber with salt, then wrap it in the towel and squeeze out as much excess liquid as possible.
In a separate bowl, combine the squeezed cucumber, Greek yogurt, grated garlic, lemon juice, finely chopped dill, and a pinch of salt.
Stir the tzatziki until well combined and set aside.
Once the chicken is cooked, remove it from the cooker and slice it into thin strips.
To assemble, lay a large pita bread flat and spread a generous amount of tzatziki on it.
Top with the cooked red onions, sliced chicken, sliced tomatoes, crumbled feta cheese, and cooked french fries.
Fold the pita tightly and wrap the bottom half in aluminum foil to hold it together. Serve immediately.
