In the basin of a slow cooker, combine brown sugar, soy sauce, minced garlic, ground ginger, sesame oil, honey, and cornstarch.
Whisk the sauce ingredients together until the cornstarch is dissolved and the mixture is smooth.
Add the chicken thighs and sliced onion to the sauce. Use a spoon or tongs to ensure the chicken is submerged.
Cover the slow cooker and cook on high for 3 hours.
Once cooked, use two forks to shred the chicken directly in the slow cooker.
Add the chopped broccoli florets to the slow cooker and stir to combine with the shredded chicken and sauce. Cover and allow the broccoli to soften for about 15-20 minutes.
While the broccoli is softening, cook the ramen noodles in a separate pot of boiling water according to package directions. Drain well.
Add the cooked and drained noodles to the slow cooker.
Toss everything together until the noodles, chicken, and broccoli are evenly coated in the teriyaki sauce.
Serve in bowls and garnish with sliced green onions, chili crisp, and chopped peanuts if desired.
