Halve the hard-boiled eggs lengthwise. Gently remove the yolks and place them in a small bowl. Set the egg whites aside.
Prepare three dye baths by pouring 1 cup of water into three separate bowls.
Add 1 teaspoon of white vinegar to each bowl of water.
Add a few drops of a different food coloring (e.g., red, blue, yellow) to each bowl and stir.
Place the cooked egg whites into the dye baths and let them soak for a few minutes until they reach your desired pastel color.
While the whites are dyeing, mash the egg yolks with a fork until they are fine and crumbly.
Add the mayonnaise, salt, and white pepper to the mashed yolks.
Mix the yolk mixture until it is smooth and creamy.
Remove the dyed egg whites from the baths and drain them in a colander. You can pat them dry with a paper towel if needed.
Transfer the yolk filling to a piping bag or a zip-top bag with the corner snipped off.
Pipe the filling evenly into the cavities of the dyed egg whites.
Arrange on a platter and serve immediately or chill until ready to serve.
