In a mixing bowl, combine the cubed chicken with 1 tbsp olive oil, 1 tbsp soy sauce, Montreal steak seasoning, baking soda, corn starch, and garlic paste.
Mix with a spoon until the chicken is thoroughly and evenly coated.
Heat the remaining 2 tbsp of olive oil in a large skillet over medium-high heat.
Add the coated chicken to the hot skillet in a single layer. Cook, stirring occasionally, until the chicken is browned on all sides and cooked through.
Push the cooked chicken to one side of the skillet. On the empty side, add the butter and allow it to melt.
To the melted butter, add the honey, crushed red pepper flakes, the remaining 4 tbsp (1/4 cup) of soy sauce, and the packed brown sugar.
Stir the sauce ingredients together until combined and bring to a simmer.
Toss the chicken with the sauce, ensuring every piece is coated. Continue to cook for another minute as the sauce thickens and glazes the chicken.
