Prepare the pickles. You can either use pickle chips as a base, or for a 'deviled egg' look, slice baby dill pickles in half lengthwise and use a small spoon to scoop out the center to create a boat.
In a food processor, combine the cream cheese, mayonnaise, shredded cheese, chopped scallions, garlic, mustard, hot sauce, a few extra pickles for flavor, and pickle juice.
Add the dehydrated potato flakes, which will help thicken the mixture for piping.
Blend all ingredients in the food processor until the mixture is smooth and creamy.
Transfer the filling to a piping bag fitted with a star tip.
Pipe the filling onto your prepared pickle chips or into the hollowed-out pickle boats.
Garnish with a sprinkle of crushed crackers and paprika before serving.
