Season the chuck roast generously on all sides with garlic powder, onion powder, black pepper, and buttery garlic & herb seasoning.
In a large skillet over medium-high heat, melt 2 tablespoons of butter. Sear the chuck roast on all sides until a brown crust forms.
Transfer the seared roast to a slow cooker.
To the slow cooker, add the au jus mix packet, beef broth, Worcestershire sauce, and beefy onion soup mix packet.
In the same skillet, melt the remaining 2 tablespoons of butter. Add the sliced onions and cook for about 15 minutes, stirring occasionally, until softened and caramelized.
Add the caramelized onions to the slow cooker, placing them on top of the roast.
Cover the slow cooker and cook on low for 7-8 hours, or until the beef is tender and falls apart easily.
Once cooked, ladle out most of the liquid (au jus) into a separate bowl for dipping.
Using two forks, shred the beef directly in the slow cooker.
To assemble the sandwiches, place a slice of provolone cheese on the bottom half of a bun, top with a generous portion of the shredded beef, and cover with the top bun.
Serve immediately with the reserved au jus on the side for dipping.
