Preheat oven to 350°F (175°C).
In a medium bowl, combine the sour cream and onion soup mix. Stir until well combined and set aside.
Season the thin-sliced pork chops generously on both sides with all-purpose seasoning.
Grease a 9x13 inch casserole dish with cooking spray.
Arrange the seasoned pork chops in a single layer in the bottom of the prepared dish. It's okay if they overlap slightly.
Spread the sour cream and onion mixture evenly over the pork chops.
Sprinkle the shredded cheddar cheese evenly over the top.
Bake for 20 minutes.
After 20 minutes, carefully remove the casserole from the oven and top with crispy fried onions.
Return the dish to the oven and bake for an additional 5 minutes, or until the onions are golden brown.
Let the casserole rest for a few minutes before serving. Serve over cooked rice, if desired.
