Using a hammer, carefully crack open the whole coconut over a bowl to catch the coconut water.
Set aside the coconut water.
Use a coconut tool or a butter knife to carefully pry the coconut meat away from the shell.
Give the coconut meat a quick rinse in a strainer.
Place the rinsed coconut meat, the reserved coconut water, and 4 cups of fresh water into a high-speed blender.
Blend on high speed for about 90 seconds, or until the mixture is smooth and slightly lukewarm.
Pour the blended mixture through a nut milk bag or cheesecloth set over a container. Squeeze the bag firmly to extract all the coconut milk.
To make the iced coffee, fill a tall glass with ice cubes.
Pour the fresh coconut milk over the ice.
Top with two shots of freshly brewed espresso.
