Cocktails are best served immediately after mixing. Pre-batched rum, amaro, lemon, and bitters can be chilled in a pitcher for up to 4 hours; add sparkling cider when serving.
Amaro adds herbal bitterness that balances the sweetness of apple cider. If unavailable, use 1/4 oz of another herbal liqueur or reduce it to 1/8 oz and add a small pinch of Angostura bitters.
Yes. Pre-chilling keeps the drink cold longer, especially important since sparkling apple cider dilutes quickly. Chill for at least 10 minutes in the freezer.
Use a rich, moderately aged dark rum (1–3 years) with molasses or caramel notes. Avoid overproof rums, which overpower the delicate apple and amaro balance.
Mix the rum, amaro, lemon juice, and bitters up to 4 hours ahead. Add the sparkling apple cider just before serving to preserve carbonation.
Yes. Fresh lemon juice provides the brightness and acidity needed to balance the rum and cider. Bottled lemon juice lacks the complexity and will dull the drink.
