Wash, pit, and roughly chop the fresh peaches. Add them to a blender and puree until smooth.
Strain the peach puree through a fine-mesh sieve into a measuring cup to remove any solids.
Pour the strained puree into a small saucepan. Add honey (or your preferred sweetener) and heat gently over low heat.
In a separate small bowl, combine the freshly squeezed lemon juice and the unflavored gelatin. Stir briefly and let it sit for a few minutes to bloom.
Add the bloomed gelatin mixture to the warm peach puree in the saucepan. Stir continuously until the gelatin is completely dissolved.
Remove from heat and divide the mixture evenly between two bowls.
Add the cherry juice concentrate to one of the bowls and stir until the color is uniform. This will create the red half of the peach rings.
Using two separate droppers, carefully fill a ring-shaped silicone mold with both the plain peach mixture and the cherry-peach mixture, filling each side of the ring with a different color.
Once the molds are filled, let the gummies set and dry out at room temperature overnight. Do not refrigerate, as this will prevent them from developing a chewy texture.
Once dried, carefully remove the gummies from the mold. They can be enjoyed plain.
For a sour coating, whisk together the granulated sugar and citric acid in a bowl. Toss the finished gummies in the mixture until evenly coated.
