Preheat your oven to 400°F (200°C).
Wash the sweet potatoes and pierce them all over with a fork.
Place the sweet potatoes on a parchment-lined baking sheet, drizzle with olive oil, and rub to coat evenly.
Bake for 45-60 minutes, or until the potatoes are tender and easily pierced with a fork.
While the potatoes are baking, bring a pot of water to a boil. Carefully add the eggs and cook for 10-12 minutes for hard-boiled.
Prepare an ice bath. Once cooked, transfer the eggs to the ice bath to cool completely.
While the main components cook, prepare the fresh ingredients. Slice the cucumber, halve and scoop out the avocado, and slice the strawberries.
Once the eggs are cool, peel them and slice them in half.
Assemble your plate. Split open a baked sweet potato and place it on the plate. Arrange the sliced eggs, cucumber, avocado, strawberries, blueberries, and cashews around it.
Season the hard-boiled eggs with salt and pepper to taste.
Optionally, prepare hot lemon water by squeezing the juice of half a lemon into a mug, adding honey if desired, and filling with hot water.
