Cut the top rind off the wheel of brie.
Place the brie in a small, oven-safe baking dish.
Drizzle the honey over the top of the brie and spread it into an even layer.
Sprinkle the turbinado sugar evenly over the honey.
Bake until the cheese is softened and warmed through (e.g., at 350°F for 10-15 minutes).
Using a culinary torch, carefully caramelize the sugar on top until it's golden brown and bubbly.
Serve immediately with crostini or crackers for dipping.
