Ingredients: 5 large eggs; 1/2 cup granulated sugar; 1 lemon, zested; 1 orange, zested; 1/2 tsp lemon extract; 1/2 tsp orange extract; 2 lbs whole milk ricotta cheese; 1 sweet pie crust (pasta frolla), for a 9-inch pie dish; powdered sugar, for dusting

In the bowl of a stand mixer, combine the large eggs and granulated sugar.

Whisk the eggs and sugar together until combined.

Add the zest of one lemon and one orange to the mixture.

Add the lemon extract and orange extract.

Add the whole milk ricotta cheese to the bowl.

Mix everything together until the filling is smooth.

Prepare your sweet pie crust and press it into a pie dish.

Pour the ricotta filling into the prepared crust.

Use the remaining dough to create a lattice top over the filling.

Bake in a preheated oven at 325°F for 1 hour and 25 minutes.
