In an 8 oz mason jar or other microwave-safe container, add the frozen diced potatoes.
Break up two pre-cooked sausage links by hand or with scissors and add them to the jar.
Top with shredded cheddar cheese.
Seal the jars and store in the refrigerator. This allows the potatoes to thaw.
When ready to eat, remove the lid and crack one egg into the jar.
Stir all the ingredients together with a fork until the egg is well combined.
Microwave for 45 seconds.
Remove from the microwave and stir again.
Microwave for an additional 30-35 seconds, or until the egg is fully cooked.
Stir one last time and enjoy.
