In the bowl of a stand mixer, cream together the softened unsalted butter and granulated sugar until light and fluffy.

Add the eggs one at a time, followed by the pure peppermint extract. Mix to combine.

On a piece of parchment paper, combine the all-purpose flour, baking soda, baking powder, and a pinch of kosher salt.
