Thinly slice two Spanish onions into half-moons.
In a saucepan over low heat, melt the butter.
Add the sliced onions to the pot. It's okay if the pot is crowded, as they will cook down.
Sweat the onions over low heat, stirring occasionally, until they are fully cooked, very soft, and translucent with little to no color.
Once the onions are soft, add the brown sugar, ketchup, and yellow mustard to the pot.
Stir everything together to combine and let the sauce simmer for a couple of minutes.
Remove the pot from the heat and allow the sauce to cool completely.
Transfer the cooled onion sauce to an airtight container and store in the refrigerator.
