Heat olive oil in a large skillet over medium-high heat. Add the ground beef and Italian sausage, breaking it up with a spoon until browned.
Add the Cajun seasoning, chopped onion, red bell pepper, and celery to the skillet. Cook until the vegetables have softened, about 5-7 minutes.
Sprinkle the flour over the meat and vegetable mixture and stir to combine. Cook for 1 minute.
