Heat olive oil in a large skillet over medium-high heat. Add the ground beef and Italian sausage, breaking it up with a spoon until browned.
Add the Cajun seasoning, chopped onion, red bell pepper, and celery to the skillet. Cook until the vegetables have softened, about 5-7 minutes.
Sprinkle the flour over the meat and vegetable mixture and stir to combine. Cook for 1 minute.
Add the tomato paste and stir until it's fully incorporated. Cook for another minute.
Gradually pour in the beef broth, stirring constantly. Add any additional seasoning to taste.
Bring the sauce to a boil.
Break the spaghetti noodles in half and add them to the skillet. Press the noodles down to submerge them in the liquid.
Cover the skillet, reduce heat to a simmer, and cook for about 10-12 minutes, or until the pasta is al dente. Stir every few minutes to prevent sticking.
If the sauce becomes too thick before the pasta is fully cooked, add up to 1 cup of water and continue to simmer.
Once the pasta is cooked, remove from heat. Top with shredded Parmesan cheese and sliced green onions, if desired, and serve immediately.
