Pan-Seared Duck Breast with Cranberry Orange Glaze

Remove duck breasts from the refrigerator 30-40 minutes before cooking to bring them to room temperature. Pat the skin thoroughly dry with paper towels.

Using a very sharp knife, score the fat cap in a diamond pattern, being careful not to cut into the meat.

Season both sides of the duck breasts generously with kosher salt. Season only the meat side with freshly ground black pepper.

Place the duck breasts skin-side down in a cold, dry skillet. Turn the heat on to medium-low.

Cook low and slow, allowing the fat to render out. Use a meat press or a small lid to ensure the skin stays flat against the pan for even crisping.

As the fat accumulates, carefully pour it off into a heatproof bowl, leaving a thin layer in the pan. Continue cooking until the skin is a deep, crispy golden brown, about 18 minutes total.

Preheat your oven to 400°F (200°C).

Turn off the stovetop heat, flip the duck breasts so they are meat-side down, and transfer the oven-safe skillet to the preheated oven. Cook for 6-7 minutes for a medium doneness.

While the duck is in the oven, prepare the glaze. In a small saucepan, combine the dark brown sugar, honey, black peppercorns, star anise, cinnamon stick, orange peel, orange juice, and fresh cranberries.

Bring the glaze mixture to a boil over medium-high heat, then immediately reduce the heat to a simmer. Cook for a few minutes until the sauce has thickened.

Remove the duck from the oven and transfer it to a cutting board or baking sheet. Let it rest for 8 minutes.

Brush the thickened cranberry orange glaze over the crispy skin of the rested duck breasts.

Slice the duck breast against the grain. Serve immediately, garnished with fresh rosemary and a sprinkle of Maldon salt for texture.
