Preheat your oven to 350°F (175°C).
Chop the tops off the garlic bulbs to expose the cloves. Place them on a sheet of aluminum foil.
Drizzle the garlic with olive oil and season with salt and pepper.
Wrap the garlic tightly in the foil and roast in the preheated oven for about 1 hour.
While the garlic roasts, combine mayonnaise, Italian seasoning, 1 tsp of salt, and grated Parmesan cheese in a large bowl.
Add the softened butter to the bowl.
Once the garlic is roasted and cool enough to handle, squeeze the softened cloves out of their skins and into the butter mixture.
Stir everything together until well combined.
Spread the roasted garlic butter mixture evenly over the halved loaves of French bread.
Bake the bread until golden brown and bubbly.
