In a large skillet over medium-high heat, add the ground sausage.
Use a spoon to break up the sausage and cook until browned through. The creator does not drain the fat.
Pour the can of sloppy joe sauce into the skillet with the cooked sausage.
Stir to combine and let it simmer until heated through.
While the meat mixture is simmering, toast the potato rolls until golden and crispy.
To assemble, spread mayonnaise on the toasted buns if desired, then spoon the sausage mixture on top.
