Prepare the vodka, lemon juice, and simple syrup mixture ahead, but add champagne and ice just before serving to preserve carbonation and chill.
Use a dry or brut champagne to balance the citrus sweetness; avoid demi-sec or sweet varieties that would oversweeten the drink.
Regular vodka works, but you'll lose the citrus note; alternatively, use lemon vodka or add a splash of orange liqueur for complexity.
Rub the glass rim with a lemon wedge, then dip into superfine sugar on a shallow plate, turning to coat evenly before adding ice and ingredients.
Yes—multiply the vodka, lemon juice, and simple syrup by the number of servings and mix in a pitcher; add champagne just before serving individual glasses.
