Place the chicken breasts in the bottom of a slow cooker.
Season the chicken generously with salt, pepper, garlic powder, onion powder, and chili lime seasoning.
Place the block of cream cheese on top of the seasoned chicken.
Add the two cans of drained Mexican style street corn.
Pour in the chicken broth.
Cover and cook on high for 3 hours.
After 3 hours, shred the chicken directly in the slow cooker and stir everything together to create a creamy sauce.
Add the cooked pasta, shredded pepper jack cheese, parmesan cheese, mayonnaise, and sour cream to the slow cooker.
Stir until all ingredients are well combined.
Cover again and let it cook for another 30 minutes to allow the flavors to meld and the cheese to melt.
Garnish with additional chili lime seasoning and fresh chopped cilantro before serving.
