Preheat your oven to 350°F (175°C).
Pour two bags of taco rice mix into a glass baking dish.
Add the beef broth and the entire jar of salsa to the dish.
Fill the empty salsa jar with water and pour it into the baking dish.
Stir all the ingredients together until well combined.
Shred the rotisserie chicken and add it to the rice mixture, stirring to incorporate.
Sprinkle the taco blend cheese evenly over the top.
Cover the baking dish tightly with aluminum foil.
Bake for 45 minutes.
Carefully remove the dish from the oven and remove the foil.
Warm the queso dip in the microwave or on the stovetop.
Pour the warm queso over the top of the baked casserole.
Return the casserole to the oven, uncovered, and bake for a few more minutes until bubbly and golden.
Serve hot, optionally with tortilla chips for dipping.
Store covered in the refrigerator for up to 3 days. Reheat covered in a 350°F oven for 15–20 minutes.
