Lay out two slices of deli turkey, slightly overlapping.
Place a slice of American cheese on top of the turkey.
Spread about one tablespoon of hummus evenly over the cheese.
Add a small handful of watercress on top of the hummus.
Place a few cucumber sticks in the center.
Tightly roll up the turkey to enclose the fillings.
Repeat to make three roll-ups.
Serve with deli dressing for dipping, if desired.
