In a skillet over medium heat, add the apple cider vinegar and malt vinegar.
Add the honey and brown sugar, and whisk to combine.
Stir in the ketchup, soy sauce, and minced chipotle peppers in adobo sauce.
If using, add the molasses and whisk everything together until smooth.
Add the garlic powder and onion powder, and whisk until fully incorporated. Let the sauce come to a simmer.
If the sauce is too thick for your liking, add a splash of water and whisk until it reaches your desired consistency.
Remove from heat and let it cool slightly before transferring to a squeeze bottle or airtight container for storage.
