Rhum agricole is a type of rum made directly from sugarcane juice rather than molasses, offering grassy, vegetal notes. Regular aged rum works as a substitute but will produce a different, sweeter profile.
Pimento dram (allspice liqueur) is a spiced liqueur made from allspice berries. Look for it in the liqueur section of most spirits retailers; Bittermens is a common brand.
Shake vigorously with ice for 10-15 seconds to chill and properly dilute the cocktail.
Yes—combine rum, lime juice, simple syrup, pimento dram, and bitters in a pitcher up to 4 hours ahead. Stir over ice when serving and garnish each drink with fresh nutmeg.
Grate a light dusting (1-2 passes with a microplane) directly over the ice just before serving to maintain aroma and appearance.
